Cookbooks are a window into the changing tastes and trends in historic cookery. They are filled with recipes for dishes like flour pudding, loaf cake, alamode beef, forcemeat, and fricassee. Beverages like shrub and syllabub pique our curiosity. In summer, there are recipes for preserving everything from cucumbers and quinces to brewing spruce beer. Our Open Hearth Cooks will be experimenting with recipes this summer that are uncommon today using guidance from cookbooks like The American Frugal Housewife by Lydia Maria Child (1832) and American Cookery by Amelia Simmons (1796). Note: fire will be lit, weather permitting.
