When English settlers came to New England, they brought their food traditions with them. They loved bread! When they found that wheat did not grow well due to disease and climate during the Little Ice Age, they turned to Indigenous grain: Maize. Our cooks will be working with the three common grains of the past – maize, wheat, and rye – and will discuss the critical role that maize played in the English diet.
